There can be hooks on both top and bottom eyes but a lower hook would be just begging to snag on the wreck.
Remember that as the fish opens its mouth it sucks in water and hopefully its prey. I reckon the assists get sucked in before the jig as they're so light.
Bluntly speaking that sounds like a faff. My method is that you take the braid in your teeth, pull taut and simply wrap the mono under and over the braid.

If we have to go printed, I'd prefer the OO name down one sleeve if poss.
Just to add, manufacturers tend to aim the 5" screens at kayak anglers as they are usually able to be closer to the screens and the smaller size of the units works well in the limited mounting space available on a yak.
Haven't played with those models before, but be aware that you may find the 5" screen a bit (very) small. I wonder if the reason it was returned was because the first owner found it too tiny.
